Eggplant & Halloumi Stack
Slice eggplant , halloumi and chorizo into 1cm thick slices.
Cook eggplant, chorizo and halloumi with oil in a frypan on medium heat until tender.
To serve: assemble items vertically and secure with a skewer.

250 grams halloumi
250 grams chorizo sausage
8 medium free range eggs
