Eggplant & Halloumi Stack

  1. Slice eggplant , halloumi and chorizo into 1cm thick slices.
     

  2. Cook eggplant, chorizo and halloumi with oil in a frypan on medium heat until tender.
     

  3. Poach eggs.

   To serve: assemble items vertically and secure with a skewer.

1 medium eggplant

250 grams halloumi

250 grams chorizo sausage

8 medium free range eggs
