1/2 cup cashews - soaked for at least 3 hours
Zest of 1 lemon
Juice of 1/2 lemon
1/2 cup frozen blueberries
5 dried dates
1/2 cup shredded coconut
1/2 cup almond meal or coconut flour
2 tablespoons coconut oil
1-2 scoops vanilla protein powder*
*(or 1 tablespoon of honey or maple syrup)
Pinch of salt
1. Drain soaked cashews.
2. In a food processor blitz all ingredients together until a rough dough is formed.
3. If the mixture is too dry to roll add a little water or lemon juice depending on taste.
4. If mixture is too wet add more almond meal or coconut flour. More or less maple syrup or sweetener can be added depending on your taste.
5. Roll into bite size balls and refrigerate for 1 hour.
